While I see many of my Facebook friends in the trenches of making meat for tamales, my parents came home from the Asian market with all of the ingredients for legit pancit and lumpia. My mom was the backbone with the “chop-chopping” as she calls it, and my father was the conductor — sifting through the cooked ingredients and showering them into the pot at curious, but methodical rates to create a steaming pot of pancit and the stuffing for lumpia (to be rolled later and bronzed on Christmas morning).

Smelling the garlic, hearing the blower and hearing that it’s only “5 more minutes” until it’s done are some of the best sensory items of the holiday season.
